Greek Yogurt Waffles

Last night Jamie was able to play with his Kent Men’s league Hockey team on the Q ice before the Lake Erie Monsters game. We took our friends Brandon and Jackie with us to watch him play and then we stayed to watch the Monsters game (they won!).

Even though I consumed multiple beers last night, I made it to the gym this morning for a 4 mile run. I also did a mini ab workout before I called it quits. When I got home I was craving waffles…and I got to thinking…if I can make greek yogurt pancakes…then I could make greek yogurt waffles!

This recipe made 10 waffles on my waffle iron. Just like the greek yogurt pancakes they freeze really well. So, on busy mornings you can take a couple right from the freezer to the toaster for a quick breakfast!

Greek Yogurt Waffles

Non stick spray for the waffle iron

1 1/2 cup 100% whole wheat pastry flour

1/4 cup old-fashioned oats

2 teaspoons baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 cup skim milk

1 cup plain Greek yogurt

1/3 cup honey

6 tablespoons egg whites

1 teaspoon vanilla extract

3 tablespoons applesauce

Maple syrup or honey-for serving

In a blender add flour, oats, baking powder, baking soda and salt. Pluse until incorporated. Place in a large bowl.

 In another bowl, whisk together the milk, yogurt, honey, eggs and vanilla until smooth. Pour the liquid ingredients over the dry ingredients and whisk until just combined. Gently fold in the applesauce.

Preheat and lightly grease the waffle iron with non stick spray.  When the waffle iron is hot, pour batter into the wells of the waffle iron. (Fill according to the manufacturer’s instructions).

Close the lid and bake until the waffle is golden and set. Carefully remove waffle from iron and serve warm with maple syrup or a drizzle of honey.

Jamie likes to have his with powdered sugar. I like them either plain with a little butter (we use earth balance) but this morning I added some maple syrup we got as a gift from some friends.
